I do it (sort of) when I am out of french vanilla. I just put a teaspoon of sugar and a teaspoon of vanilla flavoring in my coffee cup with a splash of milk and then add the hot coffee. No it isn't exact but it is good.
You know what else works is using powdered hot chocolate mix in your coffee. I bet you could chop some peppermint candies,( or buy peppermint flavoring) add a couple spoons full of hot chocolate mix and then the hot coffee. The heat would melt the candy and while your flavor wouldn't be white chocolate, it would be chocolate peppermint.
