Sorry, I had to work fast with these so no video detailing each step of the way. Just the finished product.
Ganache filling: flavored coffee, almond extract, Ghirardelli dark chocolate, 1 teaspoon of sugar (to offset the coffee’s bitterness), heavy cream.
Shells: Hershey’s Cocoa Powder, Ghirardelli dark chocolate (melted and tempered).
Techniques: Shaped by hand, allowed to set (firm up) in fridge, hand-rolled in cocoa powder, fork dipped (excess melted chocolate tapped and drained through fork), spoon-drizzled melted chocolate. Excess chocolate hardened on wax paper, shattered, and used as a garnish in the center of the plate.
